Ingredients:
- 2 tbsp vegetable oil
- 2 shallots, thinly sliced
- 2 cloves garlic, thinly sliced
- 150 g boiled tripe, thinly sliced length
- 400 g white rice
- 1 leek, roughly sliced
- 4 tbsp sweet soy sauce
- Puree:
- 2 large red chilies, deseeded, boiled
- 2 red cayenne peppers
- 2 shallots
- 1 clove garlic
- 1/2 tsp fried terrazzo
- 1 tsp salt
- Complementary:
- 2 tbsp fried shallots
- Pickled cucumber
Step to make :
- Sauté the shallots and garlic until wilted.
- Add The Spices, stir until cooked and fragrant.
- Add tripe, mix well.
- Add the rice, leeks and sweet soy sauce.
- Stir well and dry slightly.
- Remove, Serve warm with Complements.
